St. Martin Chardonnay 2014
Our single estate, single clone St. Martin Chardonnay was crafted in a light Chablis style.
Picked cool from 17 year old vines on our 2.5ha home block to keep crispness into the juice, 100% destemmed and cold soaked for a few days before transferring must to barrels for fermentation. Minimal lees stirring and only partial Malolactic fermentation kept the style elegant and approachable. Élevage in mainly neutral 228L French oak (17% new) has delivered a refreshing, graceful Chardonnay with retained fruit flavour.
Pale straw green colour, soft citrus lime nose with a discrete hint of vanilla oak. Mineral, crisp and refreshing finish that lingers, with a touch of new oak evident. Will benefit from aging for 5-6 years or drink now as a young Chardonnay in the sun. Please don’t over-chill as this hides the fruit aromas. Well suited to salad luncheons, pork, poultry and seafood.
